Cashew Alfredo Sauce

If you love garlic, this one is for you. made with cashews, roasted garlic, nutritional yeast, & salt/pepper to taste, this garlicy cream sauce is everything. so simple to make yet delicious & versatile. While it is great on it’s own, this savory sauce can be used as a great base to start another great sauce. Whether it’s rich mac & cheese or vodka penne, this dairy free sauce is a must in your kitchen. I love to pair it with sautéed kale, vegan chicken nuggets, & a big ole piece of garlic bread. Never can have enough garlic right?




Ingredients:

  • ¾ cup raw unsalted cashews

  • ¾ cup water

  • 4 tbsp nutritional yeast

  • 3-4 cloves garlic, minced

  • 1 teaspoon salt

  • Black pepper, to taste

  • ¼ cup water


In a blender or food processor, pureè equal parts cashews and water until smooth.


In a heavy dry pan, cook garlic with a small amount of oil over low heat until brown, about 3 minutes. Add cashew cream, nutritional yeast, salt, black pepper, and ¼ cup water.


Heat thoroughly, adding more water if the sauce is too thick. Toss with pasta of choice and serve.
