While this recipe definitely took some playing around with, it was beyond worth it. These crispy chipotle seasoned cauliflower tacos absolutely rank in my top ten taco recipes. The cauliflower came out perfectly crispy, while the cauliflower itself was delicate and melts in your mouth. What I love most about this recipe is it is so versatile, whether it is buffalo seasoning, garlic parmesan, chipotle seasoning, a cajun blend, or whatever you are craving that day it is so easy to change out the sauce on the cauliflower with the same delicious outcome.

Ingredients:
1 head of cauliflower
1/2 cup flour
1/2 cup milk of choice
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon garlic
1/2 cup sauce of choice (i like taco seasoning)
salt/pepper
panko breadcrumbs
How to:
Heat oven to 375 degrees
In a medium bowl, combine the flour, milk of choice, paprika, garlic, salt, & pepper. In another bowl, pour about a cup and a half of panko breadcrumbs
Cut cauliflower florets into bite size pieces. dip the cauliflower first in the wet batter completely then transfer to breadcrumbs and fully coat. repeat until all pieces are coated
Line a baking pan with foil, spray with oil and place the cauliflower on the pan, making sure the pieces are spread out. bake for 20 minutes
Remove from oven, toss in sauce, and place back in the oven for 10-15 minutes to crisp up
Once cauliflower is done and build the rest of your taco
