This Chipotle Lime Ranch recipe is perfect. You heard me correctly, perfect. And I do not use that word lightly.
It is the perfect blend of creamy, zesty, and spice without being overbearing plus it takes 10 minutes to make, what else could you ask for? And it’s dairy-free? Come on now.

I love to use this over my go-to salad which consists of spinach, roasted sweet potatoes, black beans, tomatoes, cucumber, Gardein chicken nuggets(https://www.gardein.com/chickn-and-turky/classics/seven-grain-crispy-tenders), nutritional yeast, and avocado. Such a satisfying and nutritious meal, what I love most about it is that it is full of protein, making it especially great for a pre or post-workout meal.
Nonetheless, there are so many ways to enjoy this dressing, it’s always good to have a couple of jars on hand for when the craving hits.
Besides its awesome flavor, the best thing about this recipe is how simple it is to actually make. Once you have all your ingredients together, there’s nothing left to do besides toss them into the blend and watch the magic happen.
Ingredients:
I (24 fl oz) jar vegan mayo
1 cup cilantro, roughly chopped + stems included
2 teaspoons chipotle powder
1 teaspoon chili powder
2 limes, juiced + zest of 1 lime
Salt, to taste
Blend until smooth. Store in the fridge with a lid and stir before use.
